Simply Asia uses 2 minute noodles.

Indeed if you don't see an Asian person, chances are, it won't be an authentic experience. I didn't know that by simple they meant 2 minute noodles. The meal had no meat or vegetables and yet it cost as much as other authentic Thai restaurants. Disappointed but lesson learned.
