Why debit before order is accepted!

Why do you guys insist on processing the payment before a restaurant has accepted. I mean it's 3 days later and i dont have my money back and yes i know it's the bank or whatever but the point is what for the restaurant to accept!!! Other food relieve apps do it and quite frankly see much better
