Furthermore, the site doesn't allow us to view when coins will expire. How then do we know how and when to spend our coins.

I expect this issue to be resolved immediately and this email responded. I've previously sent an email which went unanswered.

Really disappointing and poor attempt at managing a loyalty program - if you can't manage the program, don't try to.
