Food Poisoning and Insurance Frustration

Back on January 6th 2022 I bought a chicken, bacon, pasta salad from my local Woolworths. 20min after eating I experienced the worst food poisoning of my life. The most severe stomach cramps which lasted for over an hour until I eventually drove myself to the ER because it wasn't ending. By this point I was dehydrated and physically exhausted. They treated me and the next day I went to get my prescribed meds. On the 8th I go immediately to my Woolworths and hand in the container, my receipt, and the receipt for the meds asking them to claim through their insurance which they say they'll do. After a week I had heard nothing so I email. I get a call that they need a letter from the doctor stating that he treated me for food poisoning which I then also go and get at my own expense. I send that through and the final invoice from the hospital I received later. I then am phoned again and told I need to submit the results of the blood test they took so I do that as well. The doctor stated he treated me for gastro symptoms that could've been food poisoning and the blood test confirms I had a bacterial infection. Again I hear nothing for a week so I email my local store manager to ask what's happening and receive no response. Days later I email again and am again ignored. Eventually I phone customer service and tell them my reference number and the whole story. They struggle to find anything and tell me they need to check if the store manager logged the docs in the right place and they'll phone me back in 20min. I didn't get a phone call back but the next day (Saturday) I get an email from the same customer service agent that they'll contact me in the new week (the week of the 7th of Feb). By Thursday I've heard nothing so I email the customer service agent asking for an update. Now on Friday I've still heard nothing and have emailed again. This whole process has been an exhausting nightmare and the onus being completely on me to run around and check up on these processes when I was the injured party is beyond ridiculous. I'm at a loss at this point on what to do and between studying full time and working I simply don't have time to keep fighting this.
