Payment for performances

It has been over a year and this restaurant has still not made payment to a performance and/or performers on some occasions,

I find it disrespectful to allow it to go this far. Any financial implications should not be burdened on artists that they choose to work with/use for their shows under these known conditions.

There is no follow up nor is there a formal apology BUT there is somehow an expectation that the performers hired are expected to understand.
