Empty promises on refund promised on 03 Jan

I booked a cruise with this company while in PE over the holidays. I booked the ctuise online on 01 Jan using my credit card. We booked a 14h30 spot available for 03 Jan. I immediately received a call from Les Kingma, who asked if I could change the cruise time to a 09h00/09h30 slot, I told him I had seen that those slots were available but chose not to book those because it was rather too early and we had no clue how far or how long the journey will be to get to their site. Of which he said it was ok we can proceed with the time we preferred, 14h30. He told me to disregard email he had sent me earlier. In his e-mail he was advising that the boat will leave at 15h00 and not at 14h30 as we had booked on their website. Subsequent to our conversation he then sent me another email confirming that we should be there at 14h15 and the cruise will leave at 14h30. On 2 Jan I noticed that the weather was not clear in PE and it was raining. I called Les wanting to find out what happens in such instances. He told me we can cancel if we are not sure and will get my full refund, I just needed to drop him an email that we had spoken and he had agreed to cancel our cruise. I did and he responded by requesting that I send him 3 different emails, which I though was ridiculous, nevertheless I did. In this emails I must send him my card number I had used to book cruise with, expiry date and cvv number of the card, which I had found very odd to be asked for cvv, nevertheless sent these details asap. The refund was not done and on the 10th of Jan I sent him an email, his response was according to their bank records the amount was not reflecting and I told him that I am 100% sure that the funds had been paid into their account as they were released from outstanding card authorisation by my bank on 03 Jan,I also requested that my banker verifies that, which she did. I also sent him screenshot of my internet banking and told him that because this was an online purchase I nor the bank cannot provide with proof of payment. He the promised to go his bank, which happens to be the same as mine and query the transaction because according to him I was now not the only person who had cancelled the cruise and they could not pick up the transaction. He sent me an email on Thursday advising he was going to the bank and I needed to give him my banking details, to check on my account, what? I was not sure. This time I gave him my account details. Same day, he came back with email saying he will refund that evening. Later in the evening I received a strange document which is not a usual proof of payment that my bank and his uses. His company name reflected on the document, but I received no sms notification, because this was a strange document and it had a Germany IP address, I was not comfortable considering that I had given him all my full credit card details including cvv number, I called FNB ***** line to verify what type of proof of payment was that and emailed it to a consultant I was talking to which he also said he had no clue because it did not even have FNB logo, so I decided to cancel my card because I was not going to wait for the next day to get Les' response to my email the same night requesting clarity on the document. I also advised him that there were not funds deposited into my account as he promised. To date, 16 Jan I have not received the refund he promised to refund in full on 03 January. This morning I had sent him an email and a text message to that effect. He responded advising that it will take two days for the funds to clear that should have been this morning already and he had advised me that he banks with FNB of which I should have received the funds same day. I've requested him to send proof of payment because Les Kingma has proven that he cannot be trusted. This transaction was such an inconvenience that I had to wait for my refund for this long with emails exchanges about empty promises not to mention fact that I had to cancel my debit credit card as a result.
