Ridiculous pricing

I received a Sorbet gift voucher for Christmas and it came with a price pamphlet. I went to get gelish nails done knowing I will have more than enough money on my gift card for it (I had R300 on my voucher and according to my pamphlet it was R295),I paid yesterday and it was R490,I don't pay that kind of money at other salons for a gelish manicure and pedicure. I would just like to know why are the prices are not fixed and how it went up in a matter of 8 months by R195?
