Poor management

Very unexpected but very disappointing as tonight myself and my partner decided to go out and have dinner the both of us as we are in Welkom for the first time visiting family here, the service we received from the manager who goes by the name “madiba” firstly we arrived at the ocean basket and were really looking forward to a good meal as ocean basket has always been a favorite in our household, the food was absolutely great there was nothing wrong but after waiting 45 minutes for a 7 piece sushi starter and then waiting again for our main meal which in total we were at the reasturant for 2 and a half hours I would surely expect the food to be good in all this time we were just waiting to be served I do understand the reasturant was a little busy but it was not unbearable I say this as I am a qualified chef and Supervision management graduate I know how things happen in the hospitality sectors but what baffles me the most is when I brought it to the manager “madiba’s “ attention the first thing he did was blame his staff, that is something that highly annoys me as he is there to ensure the customer gets the best possible service they can provide during the conversation he blamed the sushi chef and then blamed the waiter for not checking the order , to my knowledge it is not the waiters job to check if the chefs are making there food the chef gets a print out from the POS system in which he/she should know slip orders and practical waiting time the waiters job is not to stand at the kitchen and ask how long her food is the chef should be knowledgeable enough to execute the amount of time for food preparation himself/herself that is not the waiters job to do but all the manager could do was blame the staff and not understand that he is there to represent the owner of the reasturant aswell as uphold the image of the franchise which he clearly does not know how to do well at all, a good manager accepts faults and brings it up in daily staff meetings to minimize that situation from happening again, it is not in his position to blame staff for something he should be overseeing as a manager of a reasturant the waitress Mamaki was exceptional with making sure we were happy and offering us anything we wanted, so I don’t quite see why a manager must bring his staff down because he’s not managing a reasturant the way it should be run, i just wanted to bring this to you’re attention as it is the festive season as if the manager is already doing this then it should definitely be a matter of concern as he is bringing the franchise look completely down by bringing everyone below him down because he can’t manage his position
