Bad service by the waiter & kitchen stuff

Last night we went to ocean basket for dinner where we ordered a full deck platter. As the platter was being prepared I told the waiter to ask the kitchen to make the platter grilled instead of fried. The waiter responded by saying if we wanted the platter grilled we should have said so at the beginning. I told him it was his responsibility to ask us how we want it done. He respinded back by saying thats the standard where it is assumed that customers want the platter fried. The argument continued until i pointed out to him that i am used to going to the brooklyn square ocean basket & the waiters there always ask that question. I had to ask him to appologise instead of being defensive about it. As he was about to go to have the order made according to the request,the kitchen staff brought the platter. The calamari was still raw. It was an unpleasant experience.
