How to serve VENISON Medium

Over the December break we had family from PE down in Cape Town. We took them out to Kirstenbosch the morning and booked for lunch at Moyo Kirstenbosch. Firstly we waited 1h30 min for our food, when it came the the duck was over done and dry, my venison after requesting it medium was served well done this was then sent back to kitchen and after 30 minutes came back rare. By then I have completely lost my appetite. The manager on duty was not pro active. How stupid didn't I feel recommending Moyo to my wife's family. I have rated the service on dine plan as per Moyos request on the 4th of January 2016 of which to date I have received no feedback.
