Undercooked chicken and the owner think it's fine

The restaurant thinks it is ok to serve undercooked chicken to customers. I have supported this restaurant for the last 7years... but never will I return. I bought chow mein and sweet and sour chicken (the usual) this time the chicken is completely undercooked and the owner does not even apologise he comes up with excuses.
