Manager blames customer for overdone steak

We had lunch for the first time at La Fayette Centurion. I enquired about corkage and was advised that they have a range of wines available but when I ordered the wine it was out of stock. I ordered a medium rare T-bone but when it arrived it was medium because it was served on a hot skillet. When I reported it to the manager he said I should have asked for a white plate. Waiter did not give me the option of different plates. Since when does a manager blame the customer for not asking for a plate. Waiter is suppose to give me the option. The pepper sauce was returned because it was cold. A waiter came and took the tomato sauce from my table and I asked them to please return it for I was still waiting for my meal to come together. I had to ask again for the tomato sauce for my then cold chips.
