Disgusting employer behavior

The food and service is absolutely fantastic however it's really sad for the people making this happen! I don't understand how people are been worked till 11:30pm at night and not get paid over time?? Probation time via contract is 7am to 4:30pm, anything after that should be considered as over time?? Some nights they work till 7:30 pm or 8pm... Don't the employees deserve to be treated fair as they make all this happen for the company, they have families as well.
