Why is the Calamari so dry?

I bought 4xF6 with upsizded fish. At a cost of R407 all four had their Calamari overdone. To use the words of my 10 year old, why is the calamari so dry. I don't know why a company that specializes in fish gets this so wrong, are there no quality checks?
