Discovery insurance and their unprofessional staff

I was involved in an accident on the 14 December 2020. The opposite party was at faulty. This party was insured with discovery. This party was very professional and extremely honest. To fast forward the review. I contacted the insurer. I submitted all the relevant documents. It took them more than a month to come back to me. I was then sent to a panel bester of their choice which to the best of my knowledge not the correct procedure becauss I being the third party have a right to the panel bester would like to use. Normally two quotes are asked for by insurance companies. I was given an appointment. My car was assessed and discovery was sent the qoute. They agreed to the quote, however, since my vehicle is not registered on my name but is registered on my dealer name as I was in business 4 years ago, the insurer refused to pay the vat amount. I mentioned to the lady, Nonhlanhla Sinthumule, via email that I am not in business anymore and I cannot claim the vat from Sars. I called her repeatedly, there is always someone else that answers as she is very very busy so I have been always told and she will return my call. To date i have never heard from her ever. She even went to the extent to tell to register my vehicle from the dealer name to my personal name if I want the vat amount to be paid. To my understanding, firstly I am not obliged to accept the quote of the insurers panel beater. Secondly after having told her repeatedly I am not in business anymore, and by the way the registered owner of the vehicle and the vat company are not even the same, she still insist I should accept the offer without the vat. Does anyone know my legal rights in this regard and how do I solve this problem
