Old Meat

I recently bought a Hine quarter at Cuyler Butchery.The meat is so old it take long to cook and the steaks are unbearable to eat.The day we bought the meat the butcher did not tell as what grade we were buying and did not explain as about the grade and witch 1 was the best,because its was my first time I would have love to know what i'm buying,I'm sitting with alot of meat I dont know what to do.I phone Cuyler butchery and tell me there is nothing they can do about it.He told me to make biltong with the meat that there customer services'wont buy anything there anymore
