Bliss over pork mince

Ladies and gentlemen. Checkers has done it again. I have no idea if this is everywhere, but Yorkstreet boulevard Checkers in George, Western cape sure has. I am taking care of my mother that suffered a major stroke some eight months ago. The ordeal has rendered her abilities, somewhat limited. For example, she can not enjoy things like steak, chops or even chicken, because she tends to choke very easily when swallowing and her chewing ability is limited. This has forced me to addapt her diet to meats that does not require much chewing. Several months ago. I found it very convenient that aside from regular beef mince, my Checkers also provided me with chicken mince. This was a true breakthrough for me, because it meant that I could vary between the two... Something was still missing though. See, my favourite meat, and also my mother's, is pork. This meant that I would buy some pork chops or stewing meat, cook it and then blend it up to make something that she could easily consume. It did however require some effort and since I am also working during the day and thus had little time and enegy left in the evenings for cooking, it became a seldom treat. I remember thinking to myself, when I first saw the chicken mince, that the only thing better for us now, would be pork mince... Well, imagine my surprise yesterday, when I found exactly that in the meat fridge at my Checkers. This might sound so silly to most people, but this has made my life so much easier and more convenient. Thanks, Checkers. You have been and always will be my favourite convenience store.
