Substandard food

Had Harcourts function at the resort, our last night fancy dress event!!! the food was pathetic I have 7 years plus experience in Hotel and hospitality industry, the food was not up to standard. The supposed potato fritters was so hard I cloud not even slice it with my knife, I complained to the head chef and he basically did nothing about it and had no remorse about the substandard food being surved. Absolutely disgusting I would not recommend the food. Can anyone at the resort explain to me why the food was substandard and why nothing was done about it???
