My experience: As a total amateur who loves knowing how things work, I decided that taking apart my (store-bought) guitar was not such a great idea. After scouring through a few sites, I stumbled upon Blackbeard's Den. I was in awe of their customer support as all my questions were met with a professional, considerate and friendly response. I ask questions. A LOT. But customer support was always respectful and patient which I highly value. The Kits they sell are extremely reasonably priced. They also have a small rating under the description of the Kit on the level of knowledge the buyer would need to build the Kit. Wrap-up: If you're considering delving into the world of guitar-building, looking for a slightly complex fun DIY challenge or even a seasoned luthier should definitely have a look at Blackbeard's site.
