The Baker Brothers of 27 Boxes, Melville: Poorly managed, but excellent bread.

The Baker Brothers at 27 Boxes in Melville only gets this good rating because their bread is truly the best. They use natural/raw ingredients only, such as stone ground flour and natural yeast and honey. Their loaves are all really great, whether it's ciabatta, sourdough bread, rye bread or kitke (also called challah). The rolls, croissants, Chelsea buns and bread sticks are not great, but it's also not their focus. If they could run their business professionally, they would do really well, But they do not seem to care much. They have not even once had any of my orders ready, even if I phoned in advance to remind them. They write down orders, but that piece of paper will never be seen again. They sometimes try to sell bread from the previous day as freshly baked, and they will tell you that the bread is ready, just to arrive there to find the dough has just been put into the oven. They bought a bicycle to deliver bread on order, but only once did I manage to order a loaf, and it came one day late. When there was a party or a public holiday, they will open their shop late in the morning after sleeping late, meaning bread is only available in the afternoon. But the one of the original brothers who work there is always friendly, and when we take back the breads that they claimed were freshly baked, they would usually replace them at no extra cost. But there is no way this business would've survived if their bread was not the best. We keep going back, but by now we know not to believe them when they say the bread is nearly ready, and we do not place any orders anymore for functions, because they do nothing more than write down what you want for the specific date, and thereafter the note will go missing. The kitkes (challah breads) are normally baked on a Friday, as is the custom. But some weeks, they decide to bake it on a Thursday. So people going in on Fridays will then not find any fresh kitke at all. So I would've given them 5 stars easily if only they were dependable at any level.
